Fruit of the work of a millenary Italian distillery located two hours away from the Portofino Dry Gin estate, each batch of our gin is created with a synergy of classic and avant-garde techniques: from an ancient Italian copper alembic, used for distill local liqueurs and grappas, with a sophisticated vacuum distillation technology, which preserves the aromas of our highly prized botanical herbs.
To produce gin it is necessary to “aromatize” an alcoholic base with some elements of which one of the components or often the main one is juniper. This can happen in various ways: either through maceration of the botanicals in alcohol, which is then redistilled to find a colorless and “cleaner” product, or the botanicals can be placed in a container placed above the alembic, so that alcohol in the form of vapor extracts aromas and perfumes.
It is limpid, colorless and crystalline. On the nose, they reveal fragrant and intense aromas of fresh citrus fruits, aromatic herbs typical of the Mediterranean scrub, rosemary, sage, medicinal herbs, light spicy nuances, delicate floral notes and refreshing balsamic hints of juniper. On the palate, it offers an elegant and delicate experience, with a soft and velvety entry. The finish is prolonged, characterized by a pleasant citrus and balsamic freshness.
