Description
History
The Eredi di Cobelli Aldo farm is located in Sorni di Lavis, in Trentino. The family has been cultivating the land since the 14th century and now it is the children who carry on the tradition. The estate has a privileged position with chalk and limestone soils and a microclimate that allows for the production of elegant and fragrant wines. The cellar was created from an old stable and next to it is the tasting room, which was the old family cellar.
Grapes used
100% Chardonnay
Production method
The grapes are rigorously harvested by hand and very quickly destemmed and pressed. The vinification takes place in steel and in classic white, at a controlled temperature. The wine thus obtained rests for months in steel and then in the bottle before being placed on the market.

Tasting notes
Pale straw yellow color with greenish reflections. On the nose notes of cedar, citrus, white flowers, smoke and great minerality and freshness. On the palate very silky, elegant and with good softness, closed by an incredible freshness and minerality, which is really the characterization of this surprising wine. An all-Italian France.
Possible combinations
Excellent with shellfish, or fish dishes with a savory connotation; to try also with other savory but delicate dishes such as asparagus, dishes based on truffles, main courses of white meat. Also excellent as a meditation wine or for a slightly special aperitif.
