Description
History
The Damijan Podversic winery is inspired by respect for nature and biodynamic agriculture. The owner, Damijan, dedicates his wine production to the phases of the moon, considering the influence of the terrestrial ecosystem. For the vinification, he mainly uses wooden barrels and prolonged macerations, even for the white grapes, convinced that the true potential of the wine lies in the skin of the fruit. The terroir of the Isonzo and Friuli Venezia Giulia contributes to the creation of oenological masterpieces.

Production method
The land on which the vines grow is made up of sandstone rocks, which give the grapes structure and minerality. The grapes used include Merlot and Cabernet, which respectively give a soft and fruity texture and elegant tannins, structure and herbaceous notes to the flavour. After fermentation, the wine is aged in 20 or 30 hl oak barrels for 3 years and then bottled, without the addition of sulphites.

Tasting notes
Intense red colour. Notes of ripe red fruit on the nose, accompanied by herbaceous hints, sweet spices and peppermint. On the palate, the wine is soft and powerful, with perceptible tannins and a decisive acidity and minerality, while the finish of the sip is long and persistent, with a complex and elegant aftertaste.
Possible combinations
Podversic “Prelit” is a powerful and complex red wine that is a candidate to be a great meditation wine, to be appreciated in every single characteristic. As a pairing we see it well with very aged cheeses, red meat or noble white meat dishes, better if substantial or tasty.
