The grapes are handpicked and the selection of the clusters takes place in the vineyard to ensure the quality of the final product. The grapes are crushed and fermented in oak barrels for a period that usually lasts from 10 to 15 days. During this process, the must is regularly mixed to extract the tannins and aromas from the skins.
