The company uses sustainable agriculture techniques to preserve soil and vine health, producing wines that embody the true spirit and character of the region. With a long family tradition and a dedication to the land, the Domaine Gerard Peirazeau is a must-visit destination for those seeking high-quality and authentic wines.
Production Method
The Pinot Noir winemaking process in Burgundy follows strict techniques to enhance the unique characteristics of the grape. The grapes are handpicked and the cluster selection takes place in the vineyard to ensure the quality of the final product. The grapes are then crushed and fermented in oak barrels for an average of 10 to 15 days. During this process, the must is regularly mixed to extract tannins and aromas from the skins.
After fermentation, the wine is transferred to French oak barrels for malolactic fermentation and aging, which always lasts an average of 12 to 18 months. During this period, the wine is regularly tasted to evaluate its development and potential.
Once the wine is mature, it is bottled and left to age for several months before being marketed.
