History
Toscana IGT “Haiku” Castello di Ama 2017 75 cl bottle is a wine produced by Castello di Ama in Gaiole in the Chianti Classico area. Founded around the 70s thanks to the vision of four families of Roman origin, with the aim of revitalizing the area and the vineyards and giving the Chianti Classico the fame it once had. The vineyards extend over an area of about 75 hectares at an altitude ranging from 475-520 m which are the cradle for wines of character. Today the leadership of the company is entrusted to Lorenza Sebasti, daughter of one of the owner family who has taken over the management of the company since 1993. Today it is affirmed among the most dynamic realities of the Chianti Classico, capable of blending together local grapes with international vines, for results of elegance and finesse both in the mouth and on the nose.

Production method
The grape harvest takes place from the beginning of September to the beginning of October depending on the achievement of ripeness of the individual grapes, which, being different, reach this condition at different times of the year. Fermentation takes place in steel tanks at a temperature of 32-33°C for a duration of about 23-26 days, induced by indigenous yeasts. The wine then carries out the malolactic fermentation in steel tanks. After the malolactic fermentation, the blend is created and it is then aged in both new and used French oak barriques.

Tasting notes
The color is intense ruby red, with intense purple reflections. The nose has aromas of ripe red fruit, especially morello cherries, but also tends to very herbaceous and balsamic hints typical of Cabernet Franc and Merlot. Subsequently, the notes of wood such as vanilla, tobacco and boisé are also very perceptible. Powerful, fruity and soft in the mouth, the finish is always characterized by an extraordinary elegance that characterizes all the production of this company.
Possible combinations
Blend of extraordinary complexity and elegance, conceived by the excellent winemaker Marco Pallanti, capable of creating a product that coincides and can be discovered sip after sip. Precisely because of this complexity we see it very well as a meditation wine or suitable for tasting; wanting to try a pairing I would recommend it with a well-cooked and in turn complex meat dish, for example roast lamb with spices and a vegetable side dish.
