History
Caiarossa is a Tuscan winery located in Val di Cecina founded in 1998. Immersed in the Mediterranean scrub and in the characteristic landscape of the Riparbella area, since its birth the company has been inspired by the principles of biodynamic agriculture for the cultivation of vineyards and for the geodynamics and oriental discipline of Feng Shui for cellar management. In 2004 the entire property became the property of Eric Albada Jelgersma and began to make a further leap in quality thanks to the ten-year experience of the property in other estates in Bordeaux and other areas. The company logo is represented by an ancient clay head of Etruscan origin, which was found in the Volterra area and which today belongs to Eric Albada Jelgersma; the name instead is freely inspired by Gaia, the mother of all the gods of Olympus and the red color of the jasper present in the grounds of the estate.

Production method
The grape harvest takes place at different times depending on the variety but is usually carried out from the end of August to the beginning of October and is done exclusively by hand in boxes. The grapes undergo a selection process both in the vineyard and in the cellar twice. These carry out a pre-fermentation maceration of 2/4 days. Subsequently the varieties ferment separately thanks to indigenous yeasts in concrete tanks and wooden barrels; the total maceration time is 25-30 days. During this procedure the must undergoes frequent pumping over or breaking of the cap. The malolactic fermentation takes place partly in concrete tanks and partly in wooden barrels. The refinement, on the other hand, is carried out in barriques and tonneaux, both new and used, always separately for the individual varieties; in fact, the aging time is variable and can range from 11 months for varieties such as Alicante to 20 months for Petit Verdot and Cabernet. After which the blend is created in concrete tanks where the wine rests for another 6 months before bottling.

Tasting notes
At the sight dark garnet red colour. On the nose notes of ripe blueberries, blackberry and cherry jam, dried flowers, notes of minerality, herbaceous and vegetal, ample and elegant spice bouquet of black pepper, vanilla, carob, coffee and licorice, with balsamic hints on the finish. In the mouth it is broad, enveloping, ripe and complex, with good body and structure. On the finish it reveals silky and almost “sweet” tannins and a balanced acidity, with a background of iodized minerality. The finish is very long and pleasant, which returns to the sweet spices.
Possible combinations
Ideal as a meditation wine given its great complexity and structure, especially if left to age for a few years in the cellar. In combination it is very suitable for very tasty and spicy dishes, whether they are based on red meat or game, or selections of tasty cheeses.
