In 2007 the Domaine Sébastien Brunet winery was founded, located near the town of Vouvray, in the heart of the Loire valley. The region is known for being the kingdom of chenin blanc, the white berried variety that represents its symbol. The 15 hectares of vineyards owned by the winery are cultivated following the certified organic method, with particular attention dedicated to the care of the chenin blanc, the main variety, but also to rows of gamay and grolleau.
Chenin Blanc 100%
It is produced using the ancestral method, a natural fermentation process in the bottle which gives the wine a delicate and natural effervescence. After harvesting the grapes, the must is fermented in the bottle without the addition of yeasts or sugars, allowing the fermentation process to take place spontaneously.
Light straw in colour, the nose perceives notes of citrus fruits, apple, pear and fresh yeast, with a slight hint of spice. On the palate, the delicate and natural effervescence blends with the softness of the wine, giving a sensation of pleasantness and freshness. The taste is fruity, with a slight hint of acidity and a soft and pleasant finish.
