History
The secret of the excellence of Chablis wines lies in geology: the “chablisienne” actually rests on a large basin of limestone and clay called “kimmeridge” consisting mainly of prehistoric oyster shells and marine fossils. From this derives the proverbial minerality of the great chardonnays of this area. Isabelle and Denis Pommier are a dynamic couple from Poinchy who are highly visible among the new production excellences of Chablis. Active as winemakers since 1990 on an area of vineyards that has grown from 2 to 15 hectares over the years, today, 24 years after the first bottling, they enjoy enormous critical consideration at an international level. In this regard, Robert Parker’s judgment is emblematic, who came to classify the Pommier cuvée “Croix aux Moines 2010” as the best chardonnay in the world for that vintage. There are four family crus: the aforementioned “Croix aux Moines” in the village classification, and three 1er Crus: the powerful “Troesmes”, the mineral “Côte de Léchet” and the very elegant “Fourchaumes”. Classic wines, with bright fruit and fascinating verticality produced with a view to passionate interpretation of the terroir through organic farming methods. All fermentations are spontaneous and take place with the exclusive use of indigenous yeasts.

Tasting notes
Very intense ruby red colour. On the nose note of very intact red fruit, with a beautiful floral bouquet and spicy notes, slightly smoky. In the mouth it plays a lot between softness and almost sharp freshness, long and very clean finish.
Possible combinations
Excellent in combination with first courses with tomato sauce, even medium-aged cheeses, cured meats and/or even some dishes based on red meat or duck breast.
