It is produced from the pomace of Corvina, Corvinone and Rondinella used to produce Amarone della Valpolicella. The pomace arrives after racking and is fermented. After which we proceed to a distillation with a discontinuous alembic, made in small quantities and slowly so as not to alter the aromas of the product; subsequently the distillate obtained rests for a few years in small wooden barrels. The final product is marketed with a 45% alcohol content.
