History
The Kyoto Distillery was born from an ambitious project born from the collaboration between the master distiller Alex Davies and the Japanese expert Masami Onishi with the aim of enhancing the exotic and unique flavors of Japan; the idea took shape in 2016 with the opening of the complex which is also the first distillery in the country of the Rising Sun dedicated exclusively to the production of gin.
Production method
To produce gin it is necessary to “aromatize” an alcoholic base with some elements of which one of the components or often the main one is juniper. This can happen in various ways: either through maceration of the botanicals in alcohol, which is then redistilled to find a colorless and “cleaner” product, or the botanicals can be placed in a container placed above the alembic, so that alcohol in the form of vapor extracts aromas and perfumes.

Tasting notes
Transparent with a slight yellowish tint. On the nose exotic and oriental notes of yuzu, green pepper, lotus flowers in a very elegant and delicate succession. On the palate it always confirms the olfactory notes except to find a higher alcohol content and balsamic note on the finish.
Usage
Perfect at the end of a meal or as a meditation drink, excellent for creating high quality refreshing cocktails!
