History
Fattoria dell’Aiola Grappa Chianti Classico 70 cl bottle is a grappa produced by Fattoria dell’Aiola, in Chianti Classico – Tuscany. There are documents of the exercise of this activity since 1397, and it has experienced various events and vicissitudes related to the history and events of the centuries of Tuscany. We then arrive at 1937, when the Marquis Giovanni Malagodi acquires ownership of the structure and starts the wine business, creating the label we know today. In 2012 the property will be acquired by a Russian family.

Production method
It is obtained from the pomace of Sangiovese grapes used to produce Chianti Classico. The still juicy pomace reaches the distillery where it is distilled by separating the heart from the head and tails. After which the product undergoes a period of aging in barrels for 12 months in order to best enhance the bouquet of aromas.

Tasting notes
Slightly amber and bright colour. Simple but very clean aromas on the nose, with memories in particular of floral essences, hay and elderberry as well as vanilla, tobacco and toasting. Initially it attacks with a good softness, to then let all its complexity be perceived on the finish.
