History
The story of Gordon and MacPhail is linked to the excellence of whisky. Founded in 1985 in Speyside, the heart of the Scottish Highlands, the company was founded by James Gordon and Alexander MacPhail, who knew how to blend and find the right maturation for whisky. With the help of John Urquhart, who became the first member of the family to own the business, Gordon and MacPhail became an independent bottler of high quality single malts recognized throughout the world. The company finds the perfect balance between whiskey, wood and aging and bottling time.
Highland Park is a distillery located in Kirkwall in Orkney, the most northerly in all of Scotland. Founded in 1798 by Magnus Eunson, a Protestant clergyman who produced whiskey illegally, Highland Park is one of Scotland’s most traditional distilleries. The malting of the cereals takes place on stone floors, giving the product a unique and balanced aroma. Orkney peat, scented by the absence of trees in that area, is another feature of Highland Park.
Production method
The process begins with malting the barley, during which the starches present in the cereal are broken down into simple sugars suitable for alcoholic fermentation. This takes place in three phases: the maceration of the barley in water, germination and drying. Subsequently, the barley is ground and added again with hot water, extracting the wort which will be fermented and distilled. The final refinement, including the choice of the right wood, is essential for the sensations that the distillate will acquire.

Tasting notes
Light amber color with luminous reflections. On the nose notes of peaches in syrup, apricot jam, spices, Mediterranean herbs and ginger. On the palate the attack is initially soft, ample with a spicy and long finish, bewitching and persistent.
Usage
Perfect at the end of a meal or as a meditation; particularly recommended for lovers of perfumed and balanced whiskeys. Also highly recommended for a gift!
