Description
History
Dom Pérignon’s Rosé cuvée was first produced in 1959, but the 2008 vintage marks a stylistic turning point. Vincent Chaperon, Chef de Cave, describes 2008 as the beginning of a “new era,” characterized by greater precision in parcel selection and extended aging to express the tension between freshness, structure, and complexity.

Includes 10% red Pinot Noir wine from selected parcels in Aÿ and Hautvillers.
Production method
Grapes are hand-harvested from Grand Cru and Premier Cru parcels. Fermentation occurs in stainless steel, followed by 12 years of aging on the lees (“en tirage”) before disgorgement. Dosage is moderate to preserve the wine’s purity and balance.

Tasting notes

Color: Bright salmon pink with coppery highlights.

Nose: Intense aromas of wild strawberries, raspberry, iris, violet, and spicy notes of white pepper.

Palate: Silky and creamy structure with extremely fine bubbles. Flavors of lemon, acacia honey, ginger, and pastry merge into a long, mineral, and saline finish.
Possible pairings
Perfect with fish dishes, shellfish, white meats, and soft cheeses. Also ideal with light Asian cuisine and red fruit-based desserts.
