Description
History
Clynelish is a Scottish distillery that can now boast 2 centuries of history behind it; it was founded in 1819 to commercialize the malt produced in the area, over time it has experienced some ups and downs which led it to close in the early 1980s when it was called Brora. The water that the distillery uses and which also characterizes its whiskeys is the water extracted from Clynemilton Burn, which, flowing over rocks rich in minerals, is enriched by giving the latter also to the distillates.
Production method
The process begins with malting the barley, during which the starches present in the cereal are broken down into simple sugars suitable for alcoholic fermentation. This takes place in three phases: the maceration of the barley in water, germination and drying. Subsequently, the barley is ground and added again with hot water, extracting the wort which will be fermented and distilled. The final refinement, including the choice of the right wood, is essential for the sensations that the distillate will acquire.

Tasting notes
Amber yellow color with golden reflections. The fresh notes of peach and mango stand out on the nose, with more complex notes of peanut butter and dried fruit, pastry cream and lemon. On the palate the whiskey attacks warm, soft, with notes of honey and vanilla and then recalls a more decisive, intense and alcoholic finish. However, the finish returns to notes of royal jelly and honey.
Usage
Perfect at the end of a meal or as a meditation; particularly recommended for lovers of whiskey or smoky or intense flavors in general. Highly recommended for collectors!
