History
The history of Volpaia has always been a story of tradition perfectly fused with innovation, quality and valorisation of the territory, which today has reached the third and fourth generation of the family, with Nicolò and Federica and their children Allegra, Olivia and Tito. The first to glimpse the potential of the area was Raffaello, who used to invite all his friends for large dinners in this enchanting place. Subsequently Carlo and Giovannella dedicated their lives to making Volpaia a place of wine, oil and vinegar of the highest quality. And once again Nicolò and Federica today take care of this legacy made up of timeless values, ensuring that the Volpaia brand is increasingly known and appreciated in Italy and around the world. The company has about 45 hectares all at over 400 m above sea level, which arise on sandstone soils rich in minerals, particularly suited to the production of quality wine; all production is certified BIO.

Production method
The grapes are harvested when they have fully reached polyphenolic ripeness around mid-September. The vinification is traditional in red, with fermentation in steel and maceration of the must on the skins. At the end of this procedure, the wine is drawn off and placed in French and Slovenian oak barrels for 24 months for refinement. Subsequently the wine is bottled and after another period of 3 months of rest the wine is ready to be placed on the market.

Tasting notes
Intense ruby red color with garnet rim. On the nose notes of ripe red fruit, cherry, raspberry and berries, with notes of violet flowers, slight herbaceous and mineral notes. Spicy bouquet of black pepper, cloves and intense vanilla. In the mouth it is soft, enveloping and of medium structure, on the finish it reveals elegant and balanced tannins, with balanced acidity. The finish is long, silky and enveloping, capable of etching the sensations of this great wine into the memory.
Possible combinations
Perfect for pairing with red meat dishes, even medium cooked or cooked for a long time, tasty and spicy. Also excellent with platters of aged cheeses. Given the great complexity and elegance, we also highly recommend it as a meditation wine.
