History

Bruno Paillard founded his own champagne house in 1981 after years of experience in the champagne trade, to create a purer product that respects the terroir. Thanks to the innovations introduced, its champagnes have a fine perlage, are naturally acidic and creamy, elegant and with an easily recognizable style. After the success obtained from the beginning, the construction of a new cellar followed in 1990 and the purchase of further hectares in 1994. Today the maison is co-managed by his daughter Alice.

Production method

It is produced with the classic method which involves two fermentations: the first, the alcoholic one and also common to other wines and the second in the bottle, thanks to which the bubbles develop. The wine can remain on the yeasts responsible for the second fermentation for a few years or for many years, determining the finesse of the bubble and the complexity of the aromatic profile. Subsequently it goes through a phase called disgorgement during which the yeasts are removed, it is capped with a mushroom cap and after a few months of further aging in the bottle, it is placed on the market.

Tasting notes

Straw-gold color and very fine perlage. The nose perceives green lemon, grapefruit, candied fruit, pineapple and then slightly more mature notes of yeast. In the mouth the entrance is already very lively thanks to a low dosage that respects the authenticity of the wine; subsequently we also arrive at a more fruity and ripe note with a slightly iodized finish.

Possible combinations

It goes perfectly with cheeses, even savory ones, second courses of white meat, even spicy ones, crustaceans and molluscs.
