Description
History
After a brilliant career in the financial world, in 1985 Alain Thiénot founded his own champagne house in Taissy, not far from the city of Reims. He started by buying some vineyards in Aÿ and Mesnil-sur-Oger; in just a few years both he and his family have managed to bring the quality of the products created to very high levels, arriving today to own about 27 hectares located in various territories. Today it is the sons Stanislas and Garance who manage the maison following all the teachings received from their father. The latter have in turn been able to establish themselves on a par with many other historically more established and long-lived maisons, creating very balanced and clean cuvées, objectively impeccable.

Production method
The production process according to the classic method or champenoise method involves two stages of fermentation: the first in vats and the second in the bottle, thanks to which the wine develops carbon dioxide and becomes sparkling. The product is aged for at least 84 months on its lees, depending on the vintage.

Tasting notes
Gold color with amber reflections, with a very elegant perlage. The nose perceives notes of white flowers, dehydrated apricot, honey, ginger, black pepper and brioche, with great austerity and minerality. On the palate, the wine is vertically structured and acidulous, but also elegant and soft, with an intense finish of spice and minerality.
Possible combinations
Exclusive champagne, suitable for connoisseurs, recommended for meditation and to accompany tasty cheeses, succulent first courses, white meats and noble poultry.
