Description
History
Bruno Michel founded the maison that bears his name in 1980, after years of study and training, following only criteria of organic cultivation and respect for the vines and their fruits. In 1985 his wife Catherine also began to cultivate the same passion; the maison is located in Pierry, a few kilometers from Epernay, in the Marne Valley. The properties extend for 12 hectares consisting of 35 parcels, 50% cultivated with Chardonnay, 40% Pinot Meunier and the remainder with Pinot noir. The champagnes are rigorously assembled on site, in quarries dug in the chalk-limestone caves, where the refinement phase is also carried out; the latter are ideal places for the conservation of champagnes due to the constant humidity present in the latter.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The first fermentation takes place in wood, including malolactic fermentation; the wine remains in wood for about 15 months. Subsequently the stop in the bottle will last for 240 months!

Tasting notes
Brilliant golden colour, with very fine and constant perlage. On the nose notes of candied fruit, dried white flowers, potpourri, cedar, toasted hazelnuts, melted butter, small pastries and great minerality. The palate is deep but also broad, creamy, intense and unique; the notes of almond, melted butter, pastry are perceived again and a surprising freshness and minerality on the finish. Long finish that returns on spicy notes.
Possible combinations
Unique product, to be intended as a meditation product. Excellent in combination with complex and structured dishes, such as dishes based on foie gras, noble poultry, white meat, truffles, shellfish and tasty fish.
