Description
History
Founded in 1975 in Trentino, Pojer e Sandri is renowned for its dedication to quality and innovation while respecting traditions. The Brandy 2007 embodies the philosophy of the winery, presenting a distillate that expresses the terroir and traditional techniques.
Production Method
This brandy is made from selected wines, primarily Chardonnay, Pinot Bianco, and Pinot Nero, obtained from carefully washed and pressed grapes in a controlled atmosphere without the addition of antioxidants. The must ferments and matures on its lees until distillation, performed using a custom-designed bain-marie discontinuous alembic.
The initial distillate, with a high alcohol content (70-75%), is aged for over 10 years in 225-liter oak barrels previously used for Chardonnay. This extended aging period imparts a complex aromatic profile to the brandy. Finally, it is diluted to a final alcohol content of 45% vol. using pure spring water.

The Brandy 2007 showcases a deep, brilliant golden hue. The nose reveals a rich array of aromas, including ripe fruit such as quince and apricot, along with pastry and sweet spice notes like vanilla, cocoa, and a hint of caramel. On the palate, it is elegant, warm, and harmonious, with notable persistence that highlights toasted notes and subtle hints of noble wood. The structure is smooth and round, without any added sugars or sweeteners.
Pairing Suggestions
Perfect as a meditation distillate, the Brandy 2007 pairs wonderfully with dark chocolate, dry pastries, or aged cheeses. It can also be enjoyed on its own to fully appreciate its sophistication and complexity.
