Description
History
It is Islay’s newest distillery, dating back to 2005, after over 120 years with no new distilleries on the island. Born as an agricultural micro-distillery, its production is one tenth of the average of other Islay distilleries. It is located inside the Rockside Farm, from which it obtains the barley which it malts directly on site to cover a large part of its needs. It is only a few hundred meters from the coast of Islay exposed to the Atlantic Ocean, by which it is strongly influenced.
Production method
The process begins with the malting of the barley, during which the starches present in the cereal are broken down into simple sugars suitable for alcoholic fermentation. This occurs in three phases: maceration of the barley in water, germination and drying. Subsequently, the barley is ground and added again with hot water, extracting the must which will be fermented and distilled. The final refinement, including the choice of the right wood, is fundamental for the sensations that the distillate will acquire.

Tasting notes
Amber yellow color. On the nose, lemon zest, vanilla, floral notes, juicy peaches, pears and hints of rich spices. On the palate, explosions of tropical fruit and dried sultanas, warm smoke and waves of honey, malt, butter caramel. Finish with a long persistence characterized by layers of citrus sweetness and sea peat smoke.
Usage
Perfect at the end of a meal or for meditation; particularly recommended for lovers of whiskey or smoky or intense flavors in general.
