Description
History
Ca’ del Vent is a small winery in Lombardy that produces sparkling wines following an artisanal and sustainable production process. The estate is located in a splendid and cool area at an altitude of 400 metres, with particularly fine soils composed of limestone and clay. The vineyards extend over 6.5 hectares and are divided into 11 different crus. Each parcel is grown, harvested and vinified individually, in order to enhance the nuances of the territory. Ca’ del Vent has decided to produce Classic Method wines that sincerely express the varietal notes of the grapes and the peculiarities of the terroir. The company follows a rigorous production protocol and the management of the vineyards is inspired by the principles of organic and biodynamic agriculture. The attention paid to the vineyard guarantees the arrival in the cellar of only healthy and genuine grapes which are vinified in a simple way, favoring the characteristics of the raw material.

Production method
The production method of this sparkling wine involves gravity decantation, fermentation with indigenous yeasts, followed by 7 months in barrique. Malolactic fermentation is spontaneous. The second fermentation takes place with grape sugar and aging in bottle sur lattes for 93 months.

Tasting notes
Golden yellow with fine perlage. Notes of small red fruits, a large honeyed note persists, with tertiary notes such as saffron and sugared almonds. In the mouth it is pleasant, fresh, lively, creamy, enveloping, with a certain mineral note.
Possible combinations
Ideal to accompany appetizers and delicate dishes based on raw or cooked fish. Also fries and first courses based on fish.
