History
Alessandro Sala, founder of the winery, has achieved his goal of producing quality wines without polluting himself, the environment and final consumers. By using disease-resistant grape varieties, it was possible to minimize the use of pesticides and other harmful chemicals. This sustainable approach preserves consumer health and the integrity of the environment. Alessandro Sala undertakes to disseminate knowledge on resistant vines to encourage their use among producers and protect the environment. His vision is based on ecology, ethics and the art of living transparently.

Production method
The carefully selected grapes are subjected to a drying process for about three months. Fermentation takes place in steel tanks at a controlled temperature of around 17 °C, in order to preserve freshness and aromas. After a delicate pressing, the wine is transferred to small 110-litre French oak barrels for an aging period that lasts for several months until bottling.

Tasting notes
It has a bright amber yellow color and an extremely dense texture, already showing an opulent appearance. The olfactory profile is wonderful, characterized by notes of apricot, date, peach, dried figs, chestnuts, hazelnuts, honey, aromatic herbs, incense and spicy nuances. On the palate, it stands out for its great balance, freshness and a slight note of salinity that accompanies each sip, balancing the sweet element and the alcohol. The finish is extraordinarily long and balsamic, leaving a clean sensation in the mouth and inviting further sips.
Possible combinations
Suitable for consumption after meals, it is the perfect accompaniment to blue or very mature cheeses and foie gras. It is equally excellent when paired with chocolate-based desserts and dry pastries. It can also be enjoyed on its own, as a meditation wine.
