Description
History
The Eredi di Cobelli Aldo farm is located in Sorni di Lavis, in Trentino. The family has been cultivating the land since the 14th century and now it is the children who carry on the tradition. The estate has a privileged position with chalk and limestone soils and a microclimate that allows for the production of elegant and fragrant wines. The cellar was created from an old stable and next to it is the tasting room, which was the old family cellar.

Production method
The grapes are harvested with care, using a manual method to avoid damaging the bunches. Subsequently, the bunches are transferred to the pneumatic press, where they are gently squeezed. The must obtained is then fermented in stainless steel containers and left in contact with its lees for a period of 8 months. After that, the wine is aged in the bottle for a further 9 months before being marketed.

Tasting notes
Pale straw yellow color with greenish reflections. The nose perceives elegant notes of citrus fruits and white flowers, accompanied by hints of aromatic herbs. In the mouth, it manifests itself with a pleasant freshness and a light minerality, with a delicate fruity texture reminiscent of apple and peach.
Possible combinations
It is perfect to be enjoyed with light appetizers, fish-based dishes, shellfish and fresh cheeses. It marries beautifully with Mediterranean cuisine, enhancing the flavors and aromas of each course.
