Description
History
The Cavallini family founded Il Borghetto, a small artisan cellar specializing in organic and biodynamic Sangiovese, in 1999. Located near the village of Montefiridolfi, in San Casciano VP, in the province of Florence, the property extends over 30 hectares of land, including woods, olive groves, vegetable gardens and a vineyard, and includes the historic Etruscan Tomb of the Archer (dating back to the 7th century BC). The winery is located on two hills, overlooking the Val di Pesa, at the northern end of the prestigious Chianti Classico appellation.

Production method
Traditional vinification, which uses maceration and fermentation techniques in stainless steel at a controlled temperature. After the refinement process, the wine is bottled without further filtration.

Tasting notes
Ruby red color that anticipates the aromatic complexity of the wine. On the nose, notes of ripe berries, dark cherries and an elegant scent of spices and tobacco emerge. On the palate, the wine is structured and harmonious, with a balance between the sweetness of the tannins and the fresh acidity. The finish is long and persistent, with hints of dried fruit and aged wood.
Possible combinations
Perfect to accompany red meat dishes, aged cheeses and pasta with meat sauce.
