Description
History
Castello di Vincigliata represents a splendid estate located in the Fiesole region, with a history dating back to 1031 and which was purchased by the Graetz family in the 1960s. Surrounded by vineyards, it also houses the Bibi Graetz cellar. Bibi, an artist at heart and a painter by vocation, approached the world of wine around 2000. Initially he managed several old vineyards, until today he reached an area of about 50 hectares of vineyards. Bibi manages to create extraordinary wines, combining the inspiration of great artists with the precision of true craftsmen. His wines defy convention while possessing a unique depth and elegance. Tasting Bibi Graetz’s wines is a fairytale journey that oscillates between the sacred and the profane. It begins with the aesthetic beauty of the labels, authentic works of art that arise from his cheerful, surreal and sometimes provocative touch.

Production method
The grapes used for Colore have been carefully selected from four prestigious vineyards: Lamole, Vincigliata, Olmo and Siena. Each vineyard is harvested up to eight times to ensure that the grapes are harvested at the ideal moment of ripeness. After an initial selection in the vineyard, the grapes are selected again once they arrive in the cellar. After destemming, they are lightly pressed and transferred to open barriques for fermentation, maintaining the separation of the different parcels with extreme care. Spontaneous fermentation lasts for about two weeks, followed by a week of maceration on the skins, during which 6-8 manual pumping over a day is carried out. After fermentation, the wine is transferred to barriques, where malolactic fermentation takes place. Each parcel is aged separately for almost 20 months before deciding on the final blend.

Tasting notes
It shows a suggestive ruby color, intense and brilliant. On the nose, fascinating notes of red fruit are revealed, caressed by hints of leather and delicate spices. In the mouth, it reveals an excellent structure. It is powerful, vibrant, with firm tannins and an impressive acid texture. The finish is long, harmonious and persistent.
Possible combinations
This wine lends itself beautifully to accompanying perfectly cooked red meat or game dishes, such as braised meats, baked duck or stewed wild boar. Furthermore, it goes beautifully with aged cheeses such as Grana Padano aged at least 30 months or cave-aged pecorino cheeses.
