Description
History
Attention to the environment and health prevails at the base of the production philosophy, so much so that at the end of the 2000s the owners made the decision to transform agricultural practices, believing and investing in organic production, obtaining certification in 2011.

100% Chardonnay
Production method
Fermentation takes place in barriques together with the fine lees, followed by filtration with the use of “earth” (a fossil compound of unicellular thin-shelled algae, ground up as flour). The refinement takes place in barriques of second use and then proceeds to the bottling.

Tasting notes
Brilliant straw yellow color and mineral notes can be perceived on the nose, sometimes with smoky nuances; the fruits are quite complex and ripe, with slight hints of vanilla. On the palate it is extremely pleasant and persistent, with a broad and generous structure. It is a wine to be enjoyed both immediately and within 10 years.
Possible combinations
It goes well with baked fish and fish in sauce, aged goat cheeses and white meats.
