From 1930 until today, the Venica family has lived 90 years of passion, commitment and accomplishments, in a constant and harmonious generational turnover. This story is intertwined between the wonderful Collio area and an inexhaustible love for the land, the vineyards and their grapes. Venica & Venica represents a family business with 40 hectares of vineyards, all located in the prestigious DOC Collio production area.
After the harvest, the bunches are subjected to a maceration of about 20 hours at a temperature of 11°/12°C, using special containers. During this process, we adopt innovative systems to protect the grapes from oxygen, thanks to the recycling of their own carbon dioxide produced during fermentation. This allows you to minimize the intake of antioxidants. The must is then fermented and aged on the lees for 5 months, partly in large wooden barrels with a capacity of 20/27 HL and partly in steel containers.
Greenish yellow colour. On the nose, the richness of the aromas of this wine is astonishing, as are the enchanting sensations that derive from it. The nose releases an elegant and complex set of sensations. The wine opens with vegetal notes ranging from the classic tomato leaf to elderflower; then delicate citrus nuances of cedar and pink grapefruit emerge. On the palate, elegance is the master. The vegetal notes intensify in a duet of freshness and sapidity. In the mouth, a velvet of gustatory and olfactory intensity is felt. It represents the determined will to produce an extremely varietal and savory wine, impeccable in its precision and stylistic rigor. It has a long future ahead of it, to be shared in the cellar together with the most loved wines.
The combination possibilities with this Sauvignon Collio are endless: eggs with truffles, crepes with porcini mushrooms, ravioli with lobster, grilled prawns, risotto with asparagus and seafood. Shellfish galore, a risotto with prawns and a touch of orange, a cream of leeks and wild garlic or an omelette flavored with aromatic herbs.
