Description
History
Vincent Gaudry is an extraordinary winemaker. He pioneered biodynamic viticulture in his region (obtaining Demeter certification in 2004, the first in the area) and currently cultivates 11 hectares of vineyards in Sury-en-Vaux, on all three different soil types found in the area of Sancerre – a truly exceptional case. The three types of soil, i.e. the calcareous clay of the “terres blanches”, the gravelly and chalky areas called “caillottes” and the siliceous areas closest to the Loire known as “silex”, give the grapes distinctive characteristics: an exotic and citrus in the first case, a full and persistent body in the second, a mineral and smoky character in the third. Vincent, with his profound interest in the ancestral role of the alchemist, is a skilled and respectful craftsman, a mediator between the qualities of the grapes and those of the terroir.

Fermentation and aging on the noble lees take place in equal parts in steel containers and wooden barrels.

Tasting notes
Straw yellow colour. On the nose, it offers intense aromas mainly of citrus fruits and flowers, which anticipate delicate toasted and mineral notes. On the palate, it is taut, vibrant and vertical, developing a pleasant citrus juiciness, supported by an important acidity and a pleasant saline note.
Possible combinations
Ideal as an aperitif, it goes perfectly with shellfish and sushi.
