Description
History
Produced by Baron de Ladoucette, founded in the 18th century, this wine is made from 25–35-year-old vines. Vinification emphasizes purity—slow stainless-steel fermentation followed by extended lees aging for depth and character.
Grape variety
100% Sauvignon Blanc.
Vinification
Fermented slowly in stainless steel over 6–8 weeks, then aged on the lees for 3–6 months with regular stirring. No oak is used, preserving the wine’s pure varietal expression.
Alcohol content
12.5%.
Tasting notes
Pale straw with green highlights. The nose opens with citrus peel—lemon, grapefruit—leading to white peach, green apple, floral hints, and a clean stony minerality. On the palate, it offers fresh, saline drive, succulent fruit, and a linear, persistent finish with mineral clarity .

Serve chilled (8–10 °C). Ideal with shellfish, scallops, grilled fish, fresh goat cheese, sushi, and light starters
