Description
History
Eolia Bianco, a wine produced in limited quantities, is made in Salina, in the heart of the enchanting archipelago of the Aeolian Islands. The producers are Luca Caruso and Natascia Santandrea, two entrepreneurs who are also the owners of the Hotel Signum in Salina, a marvelous structure that houses a renowned restaurant. The name of the wine derives from the place where it is produced: Malfa, a charming village in Salina, in the archipelago of the Aeolian Islands.

Production method
After the harvest, the grapes are delicately pressed together with the whole bunches, and the fermentation takes place in small steel vats at a controlled temperature. Subsequently, the wine matures on its fine lees for about 7 months.

Tasting notes
Straw yellow colour. The nose releases a variety of scents, ranging from jasmine flowers to Mediterranean herbs, with delicate notes of iodine and damp stone. Its freshness is evident from the first sip, as well as the minerality.
Possible combinations
Perfect for pairing with savory but delicate first courses, such as spaghetti with seafood, first course with seafood, oysters and shellfish. Also perfect with a nice mixed fry, as it has a good acidity. Alternatively, also excellent as an aperitif, especially on warm spring/summer evenings.
