Description
History
The distillery is historic and has been in operation since 1918, it was the state distillery of Trinidad. In 2001 the government decided to stop the production of sugar cane and therefore also to abandon the distillery. In 2004 Luca Gargano, during a trip to Trinidad with the photographer Fredi Marcarini, came across the disused distillery and glimpsed the incredible potential of that treasure kept inside.
Production method
The rum was distilled in 1998 and then aged for 22 years in two types of wood (ex-bourbon barrel, ex-sherry oloroso barrel) in a tropical-continental climate.

Tasting notes
The rum produced by the silent Caroni distillery of Trinidad is rare and ancient, characterized by a majestic flavor. It stands out for its strong presence of tannins, woody hints and a wonderfully intense aroma with notes of tar and pepper. Concentrated and austere finish of medicinal herbs, coffee, licorice and orange peel, very long. This version of the rum also has an unusual juicy character thanks to the development of a further degree of vinous complexity, richness and finesse, due to the last three years of maturation in second passage Oloroso Sherry casks.
