Description
History
Capichera is one of the most important and renowned Sardinian wineries in Gallura, located in Arzachena, “nestled” among the granite rocks of the area. Despite having achieved strong commercial success, the company has remained family-run since the 1970s; its peculiarity was the intuition to enhance the pure Vermentino, sometimes vinifying in barrique and giving life to very long-lived wines capable of improving over time. Over the years the company has been able to produce interesting wines also based on red grapes, such as Carignano and Syrah, capable of perfectly representing the territory.

Production method
The harvested grapes are transported to the cellar and subjected to a short cold maceration on the skins, followed by delicate pressing using a pneumatic press. The resulting must is fermented in stainless steel containers at a controlled temperature, without the skins. After fermentation, we proceed with racking and refinement in steel for a few months before bottling.

Tasting notes
Pale pink color with coral reflections. On the nose, you can recognize intense aromas of flowers such as rose and violet, red fruit such as currants and citrus notes. In the mouth, it stands out for its roundness and softness, with a pleasant saline note in the aftertaste that evokes the proximity of the sea.
Possible combinations
It can be combined with a platter of cured meats and cheeses, with salmon, and also excellent with first courses with sauce.
