New project by the Maestro, this Ribolla was bottled in 2017 and rested for another 7 years in the bottle! Wine outside of any classification, obtained through the vinification of fine Ribolla Gialla grapes in underground Georgian terracotta amphorae, according to a thousand-year-old winemaking practice. Great complexity and expressiveness make it a great meditation wine or to pair with refined and tasty dishes.



The Gravner Agricultural Company, founded in 1901, has deep roots in the history of Collio, in Friuli near the border with Slovenia. Francesco Josko Gravner inherited his passion for working the soil from his father and uncle, who introduced him to the world of agriculture. In the 1980s, he started with conventional viticulture, but later embraced a completely different philosophy. In 1997 he abandoned modern technology to embrace a more traditional approach, macerating the grapes in large wooden vats. In 2001 he took a decisive step towards winemaking in underground terracotta amphorae, following an ancient practice originating from the Caucasus. Gravner adopts a natural approach, refusing to manipulate the wine with additions or interventions and underlining the importance of following the instinct and rhythm of nature. He criticizes modern practices taught in wine schools, underlining the importance of following the authenticity of farmers. His rebellious and authentic vision has earned admiration, even as it has caused divisions in the wine industry.

Production method

From Ribolla grapes, these were fermented with a long maceration in underground Georgian amphorae, using indigenous yeasts and without temperature control. After racking and pressing, the wine returned to the amphorae for another 5 months before starting refinement in large oak barrels, where it remained for 6 years. It was bottled without fining and filtration in September 2017, then resting for a further 7 years in the bottle.

Tasting notes

The wine has an intense amber color. On the nose, it evokes the Collio area and the characteristics of the grape, with hints of aromatic herbs, fruit and flowers, accompanied by notes of beeswax and citrus fruits. The particular tannicity is the result of maceration in amphora. On the palate, it stands out for its full body, lively freshness and a balsamic touch. This wine offers an extraordinary and exciting sensory experience.

Possible combinations

Excellent as a meditation wine or paired with first courses with tasty sauces, white meats, blue and/or mature cheeses.
