Description
History
In 2005, the Ca’ di Rajo wine estate was founded, founded on the legacy of the Cecchetto family, active in the production of grapes since 1931, first with their grandfather Marino and later with their father Bortolo. Currently, the third generation of Cecchetto, made up of brothers Simone, Alessio and Fabio, expertly guides the company.
Glera, Pinot Grigio, Chardonnay, Traminer, Sauvignon Blanc, Cabernet Sauvignon, Cabernet Franc and Merlot are also grown in the fertile soils of Ca’ di Rajo.

Production method
The vinification of this wine is traditional in white; the secondary fermentation is carried out with the Charmat-Martinotti method, which involves refermentation in an autoclave.

Tasting notes
Pale straw yellow color with greenish reflections. On the nose, pleasant floral notes of acacia flowers and the citrus aromas of grapefruit, followed by nuances of apple, very fine and persistent perlage. On the palate, it is balanced, with a good structure, with a pleasant flavor and excellent persistence.
Possible combinations
Highly recommended as a toast or to bring to an aperitif, especially on a warm spring or summer evening. Excellent to combine with mixed fried foods, delicate fish dishes or delicate first courses.
