History
Located in the heart of Burgundy, Domaine Peirazeau is renowned for its artisanal approach and meticulous care in winemaking. The Les Genavriers vineyard, classified as Premier Cru, features limestone-rich soils and optimal exposure, imparting a harmonious structure and unique minerality to the wine.
Grapes used
- 100% Pinot Noir.
Production method
- Harvest: Handpicked, with rigorous selection of the best bunches.
- Vinification: Traditional fermentation with indigenous yeasts in wooden vats, followed by extended maceration to enhance structure and aromas.
- Aging: Aged for 16-18 months in French oak barrels, with a percentage of new wood to enhance complexity and depth.

Tasting notes
- Color: Deep ruby red with garnet highlights.
- Aroma: Complex bouquet of ripe red and black fruits like cherry and blackcurrant, complemented by notes of sweet spices, underbrush, and a hint of vanilla.
- Taste: Elegant and enveloping, with fine, silky tannins, well-balanced acidity, and a long, mineral-driven finish.
Possible pairings
Perfect with red meats, game, stews, and aged cheeses. Also excellent with elaborate mushroom and truffle-based dishes.
