Description
History
The residence is located in Buxy in the Burgundy region, in the Montagny area, located in the southern part of the côte Chalonnaise. Despite his origins in the Mâconnais, Laurent has always had the intention of settling in Buxy to create his wine estate. In 1997 he bought his first vineyard plots and in 2006 he reached an area of 5.5 hectares. It currently manages around 18 hectares of land distributed between the villages of Loché, Montagny and Mercurey, of which 6.4 hectares are classified as Montagny 1er Cru. In the past, the company was located in the old medieval prisons with characteristic narrow and picturesque cellars. However, in 2018 it moved to the “Château de Buxy”, located in the heart of the village. This move made it possible to create a cellar for tastings and provided a suitable working tool for the growth of the vineyards.

Production method
The grapes, harvested manually, are transported to the cellar and pressed using a pneumatic press. Subsequently, the wine ages for a period of 12 months in 500-litre oak barrels, at least 10% of which are new.

Tasting notes
Golden yellow. The scent of the wine faithfully reflects the characteristics of the terroir of origin, with clear hints of melted butter, hawthorn flower, toasted almonds and intense minerals. The taste is full-bodied and velvety on the palate, leaving a persistent and fascinating hint of salinity at the end.
Possible combinations
The ideal combination is obtained with a risotto with seafood or a delicate fish soup, but it can also be appreciated with dishes based on aged cheeses. An elegant choice for special occasions or moments of pleasant relaxation at the table.
