Description
History
Nicola and his brother cultivate biodynamic vineyards in 5 hectares of land in Gussago, Franciacorta. Chardonnay and Pinot Noir wines are without added sulfites and have low levels of naturally occurring sulfites. The calcareous-chalky soil gives minerality to the wines. They produce around 35,000 bottles.

Production method
Rosé wine produced from Pinot Noir grapes harvested by hand and fermented without contact with the skins thanks to indigenous yeasts. Aged in concrete tanks, the wine is bottled and subjected to a second fermentation in the bottle for about 60 months. The dosage is “Nature”, with no added sugar to enhance the original flavor of the product.

Tasting notes
It has an antique pink color with golden reflections, a fine and rather persistent perlage. On the nose notes of small red fruits and undergrowth, chestnut honey, dried flowers and minerality, yeasts, melted butter and brioche. In the mouth it is soft, enveloping and broad, but also powerful, austere and vertical, vibrant and held up by a robust body and truly perceptible acidity and minerality. Very long and mineral finish.
Possible combinations
Rosé de noirs Nicola Gatta is one of the 3 “natures” produced by the company, able not only to enhance but to enhance the characteristics of the vineyard of origin, biodynamic agriculture and the power of pinot noir sparkling in the classic method. Perfect for pairing with tasty white meat dishes or first courses with truffles or lasagna. Given the great complexity and aromatic caliber, it becomes a great meditation wine, to be appreciated in every single nuance.
