History
The Conte Vistarino farm is owned by the historic Giorgi di Vistarino family, in the municipality of Rocca de’ Giorgi. It was precisely Count Augusto Carlo Giorgi of Vistarino who was the first to think of the cultivation of pinot noir in Italy and in the Oltrepò Pavese area; today his legacy is taken up by the generation represented by Ottavia Giorgi di Vistarino, with the firm will to best represent this splendid terroir and raise the quality and the market of its wines in Italy and in the world. The estate currently covers 826 hectares, 200 of which are planted with vineyards; almost all of the vineyards are located within the municipality of Rocca de’ Giorgi.

Production method
This wine is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The wine then rests for 30 months in contact with its lees in the bottle.

Tasting notes
Bright straw yellow color tending towards blond, with fine and persistent perlage. On the nose, exquisite elegance of aromas of citrus fruits, green apple, yeasts, small pastries and minerality. On the palate it is elegant, the bubble caresses the whole palate; good structure with a fresh acidity on the finish.
Possible combinations
Cépages is a classic method sparkling wine for superfine palates or for those who want to approach drinking absolute quality sparkling wines. Elegant and rich, it is particularly suitable for toasting special occasions and achievements, or as an aperitif in the company of loved ones. In food pairing it is particularly suitable with shellfish, fish crudités, risottos and porcini mushrooms or champignons.
