Description
History
The Marolo distillery was founded in 1977 in Alba in Piedmont. For over forty years, this distillery has expressed the essence of the territory through the distillation of highly prized grappas from the finest Italian vines. A particular focus is dedicated to the enhancement of the exceptional varietal heritage of the Langhe, Roero and Monferrato, today a World Heritage Site. The artisanal distillation takes place in pot stills in a bain-marie, one for the white pomace and one for the red: a process that requires small quantities and long times to respect the natural personality of the raw material.

Nebbiolo pomace previously used to produce Barolo
Production method
This grappa is produced by distilling the pomace of Piedmontese Nebbiolo grapes previously used to produce Barolo. The pomace arrives after racking and is fermented. After which we proceed to a distillation with a discontinuous alembic in order to maintain and preserve all the primary aromas of the grapes; after which distilled water is added until the liquid reaches the desired alcohol content of 50°. In order to elevate the aromatic and tertiary sensations, the grappa ages for 12 years in barriques.
Tasting notes
It presents itself to the eye in a light and luminous amber color, with golden reflections. Intense and rich bouquet on the nose: from sensations of dried fruit, rare to find so clearly, candied fruit, dried plum, raisins which then fade into more spicy sensations such as boisé, pepper, licorice, cloves and tobacco. Wide, soft and powerful in the mouth, alcoholic and persistent finish, pleasantly ripe and elegant.
Usage
Perfect for after-dinner/after-dinner or moments of relaxation alone or in company. Ideal for lovers of powerful grappas with a broad shoulder, which manage to express a wide range of aromas.
