Description
History
Istine is a relatively young producer that began bottling under its own name in 2009, though it works vineyards in historic areas of Chianti Classico (Radda, Gaiole) at high elevation and on rocky soils that impart mineral character. Certified organic since 2016. The 2022 vintage achieved well‑balanced ripeness of Sangiovese, vibrant acidity, and strong diurnal temperature shifts—all reflected in the wine.

Vinification
Grapes sourced from multiple estate vineyards: Istine, Casanova dell’Aia, Cavarchione, Tibuca and Le Noci. Organic farming; fermentation with indigenous yeasts; aging in large neutral oak casks so as not to overpower the fruit.

Tasting notes
Bright medium‑red color. On the nose: sour cherry, raspberry, plum, aromatic herbs, light balsamic touches, noticeable minerality; a hint of white pepper. On the palate: balanced, with lively acidity bringing energy, fine clean tannins, medium body, and a long finish with fruit and spice echoes.
Food pairing
Great with tomato‑based pasta, grilled white meats, mushrooms, Tuscan salumi, and medium aged cheeses. Serve at 16‑18 °C, ideally after brief decanting.
