Description
History
Cantina di Santadi was founded in 1960 by a group of grape producers in Sardinia. Initially they concentrated on the production of bulk wine, but the qualitative turning point came with the advice of the oenologist Giacomo Tachis in the 80s. From that moment on, the winery has seen its reputation and the prestige of its wines grow, such as the Carignano vinified in barrique and the Sardinian Vermentino, which fully express the territory and are highly appreciated all over the world.

Production method
The grape harvest begins at the end of August with the Chardonnay and continues throughout the month of September for the rest of the varieties. After a soft pressing of the grapes, the must is fermented in barriques. At the end of this process the wine rests with the fine yeasts by means of the bâtonnage/pumping over technique, which allows a natural increase in the body of the wine and helps the autolysis of the yeasts, as well as enhancing the aroma of the wine. Subsequently it is then bottled, and after a break of a few months it is put on the market.

Tasting notes
Bright straw yellow color with greenish reflections. The olfactory analysis reveals sensations of exotic fruit such as pineapple, papaya, mango and banana, citrus peel and chamomile flowers. Even more mature notes of butter, yeast, hay and vanilla. On the palate soft and round, contrasted by a good acidity but all in all the wine expresses balance and a certain maturation, perfect harmony between more “alive” and fresh notes and the complexity dictated by the barrique.
Possible combinations
“Villa di Chiesa” is perfect to combine with white meat dishes, even tasty ones with a certain aroma and structure, or with tasty fish dishes such as amberjack fillets, octopus and shellfish.
