Description
History
“I Mandorli” is a winery located near the Tuscan coast, with strong leanings toward natural and biodynamic practices. The Aleato wine is part of the estate’s experimentation with aromatic varietals: crafted with respect for fruit, gentle processing, and minimalist winemaking. Its vintages are rare and belong to a niche of the estate’s identity, placing Aleatico as the central grape in blend with Sangiovese.

Vinification
Moderate maceration using native yeasts, fermentation in steel at controlled temperatures. Aged in vats and bottles before release, with no heavy wood influence.

Tasting notes
Deep ruby. Aromas of rose petals, dark red fruits, sweet spices and subtle balsamic hints. On the palate it is round with elegant tannins, balanced freshness and a persistent finish echoing floral and fruity notes.
Food pairing
Pairs excellently with game dishes, braised wild boar, flavorful red meats, aged cheeses and dark chocolate. Serve at 16‑18 °C, with a short decanting recommended to express the aromas.
