Description
History
The estate is located on sandy-gravelly and clay soils, characteristic of the Graves appellation, closely linked to its proximity to the Garonne River. Currently, the vineyards cover nearly 40 hectares. Additional plots in the Illats, Podensac and Saint-Selve areas have been added to the original historic Tour du Château vineyards in Portets, creating a variety of soils where each grape variety can be planted on the most suitable soil. The new vines have been planted at a density of 7,000 vines per hectare, to improve the overall quality of the wine and highlight its aromas and finesse. The estate is pursuing environmental certification to recognize its commitment to quality and sustainability, having already achieved level 2 of the “High Environmental Value” (HVE2) certification.

Production method
The vinification involves a cold pre-fermentation maceration for 4-5 days, with three daily pumping overs. For the most valuable plots, malolactic fermentation takes place in barrels, followed by aging for 12 months in oak barrels, with 20-25% new barrels each year.

Tasting notes
Ruby red color. On the nose a complex bouquet of fresh berries, enriched with spicy and smoky notes. Initially tense in the mouth, the wine unfolds magnificently on the palate, supported by a refined silky tannic structure, wrapped in fresh and dark fruits of Merlot, together with the tannic finesse and aromas of blackcurrant typical of Cabernet Sauvignon and Petit Verdot. Persistent and spicy finish.
Possible pairings
Perfect with structured first courses or second courses based on red meat or game, even if cooked for a long time, or with medium-aged cheeses.
