Description
History
Founded in 1975, the Pojer e Sandri company is located among the hills of Faedo, in Trentino. The distillery has always stood out for its innovation and pursuit of quality, combining traditional methods with modern technologies to create distillates that reflect the territory and the passion of the producers.
Raw Material
Grappa di Pinot Nero is obtained from fresh Pinot Nero pomace, sourced from the company’s vineyards located at an altitude between 300 and 600 meters above sea level.
Production Method
The pomace, after being washed and fermented for a period of 4-8 days, is distilled using a discontinuous bain-marie alembic, designed in collaboration with the owners themselves. The resulting distillate has an initial alcohol content between 73° and 78°. It is then diluted with spring water to reach 48° alcohol and subjected to filtration at a temperature close to 0°C before bottling.

Tasting Notes
- Color: Clear and crystalline.
- Aroma: Ethereal and intense, with hints of marasca cherry.
- Taste: Dry and harmonious, with a characteristic decisive yet balanced flavor.
Possible Pairings
Ideal as a digestive at the end of a meal, it pairs well with desserts based on dark chocolate or dried fruits. It can also be appreciated in combination with aged cheeses or as an accompaniment to moments of meditation.
