History
Glenfarclas is located in Ballindaloch, in the county of Speyside, and the translation of the name literally means valley of green prairies precisely because it is located in open countryside. Despite being located in Speyside, the company has preferred to keep only the word Highlands in its labels since having more than 100 years of history at the time of its foundation, the word “Speyside” did not yet exist. It has still remained today one of the very few companies still managed at the family level, unlike most of the others which are controlled by large corporate groups. The elements that characterize it, in addition to the family management, are the use of the purest water from the Ben Rinnes springs, the very careful choice of barley and the peculiarity that the stills are the largest in all of Speyside and remained the last to use the ancient method of heating the latter on direct fire. For the refinement, ex-Sherry casks from Seville are still used, a practice that is now more unique than rare.
Production method
To produce a single malt whiskey, the barley is first subjected to a malting process, during which the complex sugars/starches present in the cereal are broken down into simple sugars, suitable for alcoholic fermentation by the hands of the yeasts. This procedure takes place in three phases: the maceration of the cereal in water to moisten it, the germination, during which the barley, which has been removed from the water, absorbs oxygen and begins to produce the radicle and to germinate; this procedure in particular will release the enzyme which is responsible for the transformation of starches into simple sugars. Subsequently this procedure is interrupted and the cereal is dried, which often takes place using peat-powered ovens, which will give the typical hints of smoked or brackish. Subsequently, the dried barley is ground and added again with hot water for further extraction of the must; this is what will be subsequently fermented and then distilled. The specification provides that for the wording single malt the whiskey must come from a single distillery and be aged for at least three years in oak barrels in Scotland.

Tasting notes
Mahogany color with honeyed reflections. On the nose notes of red fruits, cherries in alcohol, raisins and citrus fruits, with notes of vanilla spice, sweet tobacco, black pepper and sherry. On the palate it is broad, elegant and refined, with a nice softness and a very persistent finish.
Usage
Perfect at the end of a meal or as a meditation; particularly recommended for lovers of elegant and refined whiskeys. Great as a gift!
