Description

History

Domaine Drouhin is today the largest and most extensive estate in all of Burgundy and can count on 80 hectares of land divided as follows: 38 hectares in Chablis, 38.5 hectares in Côte de Nuits and Côte de Beaune, 3.5 hectares in Côte Chalonnaise. Within these, most are vineyards classified as Premier and Grand Crus, all planted with Pinot Noir and Chardonnay. The “domaine” was expertly built over the years by one of the most important families in the French wine scene, thanks to targeted purchases and agreements between local families; some vineyards are counted among the most famous in Burgundy such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, Corton-Charlemagne and others. Since the 2008 vintage, the name Vaudon has been associated with Joseph Drouhin for all his Chablis wines as a sign of the historical link with the territory.

Production method

The Pinot Noir grapes used for the production of this wine come from the Gevrey-Chambertin denomination, one of the most famous in the world and in all of Burgundy. Wine has been produced in the area since 630 AD. with outstanding results. The grapes are harvested by hand and undergo a soft pressing, after which the vinification process with fermentation on the skins lasts for 2/3 weeks thanks to indigenous yeasts with frequent submersion of the cap (usually once a day). Aging takes place in barriques (20% new barriques) and lasts for 14-18 months depending on the vintage, during which the wine is frequently checked so that the elegance and expression of the territory are as always at the highest levels .

Tasting notes

At sight the wine has an intense ruby red color, with a garnet edge. On the nose notes of small ripe red fruits (currants, blueberries and wild berries), with violet potpourri, balsamic and minerality, with notes of tobacco and damp undergrowth. In the mouth the wine is refined, soft and velvety, with a good body. The tannins are very elegant and silky, with a fresh final acidity and pleasant notes of spice. The notes and flavors are those of a great Burgundy red.

Possible combinations

Great meditation wine, unquestionably worth trying. Ideal in excellent combination with savory first courses, for example with forest mushrooms or truffles, or with savory main courses of white meat. Also perfect with medium-aged or savory cheeses.
