Description
History
The Borgo Savaian company, located in the province of Gorizia in Friuli, was founded by Bruno Bastiani. Today it is led by Stefano and his sister Rosanna who follow the tradition of their grandfather Bruno, constantly improving the wines produced with a constant search for quality. The company exploits the characteristics of the Collio terroir to produce perfumed wines with a high natural alcohol content.

Production method
The vines have an average age of about 15-16 years, an element that gives complexity and structure to the wines produced. The grapes are harvested when they reach full polyphenolic ripeness. The vinification is traditional in red with prolonged contact of the must on the skins. Once the wine has been obtained, it is drawn off and decanted into barriques where it will spend a few months for refinement.

Tasting notes
Intense ruby red color with violet reflections. Intense notes of red fruit on the nose such as raspberry, blackberry and currant, with herbaceous, mineral and spice notes such as vanilla and licorice. Initially soft on the palate, it reveals great structure, sapidity and a sharp final acidity, with herbaceous and spice notes.
Possible combinations
Merlot di Borgo Savaian is ideal with main courses of red meat or game, or with abundant and rich first courses with meat sauce. Given the great initial softness of the type of grape, it also lends itself very well to pairing with pungent flavors, for example risotto with radicchio and brie.
