100% Chardonnay
Production method
The grapes are harvested manually, in order to preserve their quality. After the soft pressing of the grapes, these undergo an initial process of alcoholic fermentation, obtaining the base wine which will then be refermented. The second fermentation instead takes place directly in the bottle and means that during this second procedure, thanks to particular yeasts, the wine you also develop carbon dioxide (which will then give life to the famous bubbles when uncorked). The procedure lasts for at least 36 months on the lees and is disgorged at least 3 months before being placed on the market.
