Description
History
Mirabella is a historic Franciacorta company, located in Rodengo-Saiano, in the province of Brescia. At the basis of their production philosophy there is respect and care for nature and its fruits, and the wholesomeness of the wine produced with respect for man and the consumer. Three oenologists form the basis of Mirabella, Teresio Schiavi, the heart and founder of the company and his two sons Alessandro and Alberto, who are today respectively Cellar Master/Sales Manager and Marketing Manager of the company.

Production method
The grapes are harvested manually, in order to preserve their quality, at different times depending on the achievement of the specific ripeness of the variety. After the soft pressing of the grapes, the three grapes are fermented separately, obtaining the base wine which will then be refermented; the pinot noir undergoes a maceration on the skins for 18-24 hours. The second fermentation, on the other hand, takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The procedure lasts for at least 36 months on the lees and is disgorged at least 3 months before being placed on the market.

Tasting notes
Powder pink color with some coppery reflections. On the nose notes of red fruits and wild strawberries, with notes of yeast and dry pastries, toasted almonds and minerality. On the palate enveloping, creamy and of good substance, they recall the notes of red fruits with a nice final freshness.
Possible combinations
Franciacorta Rosé di Mirabella is a classic method sparkling wine excellent for pairing with dishes based on tasty cheeses, salmon and some first courses, especially if with tomato sauce, such as lasagna or first courses with meat sauce. Also excellent for a special toast in company.
